It officially feels like Fall outside, and for some – that means the return of the Pumpkin Spice Latte (which I have to admit – I’m not a fan of) I may have lost some of my followers for that ounce of honesty haha! But aside from the lattes, I love Fall foods sooo much and I can’t wait to try some new recipes this year. I found this recipe, for pumpkin pie french toast, while sifting through pins on Pinterest and I was hesitant to try it. I haven’t had too much luck with Pinterest recipes these days. I feel like so many of them are total epic fails – anyone else with me? But this proved to be one of the gems!! Seriously so good. And if I can make it – you KNOW you will be able to =)
This particular recipe is from Erin of $5 Dinners. She has amazing food blog and I believe she even has a cook book out! You should definitely check out all her amazing budget friendly meals =)
What You Need: Whole Wheat Sandwich bread // 3 eggs // 1/2 cup milk // 3/4 canned pumpkin (I added a little more!) // 1 tsp homemade pumpkin pie spice // butter & syrup for serving // optional – I served with halved pecans
To make: In medium mixing bowl whisk together the eggs, milk, pumpkin and spice mix until smooth. Dip each side of the bread into the mixture and cook on a hot, greased griddle or skillet. Flip after 1-2 min. Served with butter and maple syrup!
